The day has finally come when The Great British Bakeoff is gracing our screens one again every Tuesday at 8pm! This year marks the 10th anniversary of the show, and to celebrate what is arguably the best bit of telly of this decade, we decided to bake a cake! Here is our delicious lemon curd cake with ingredients from Tesco…

 

 

Tesco Lemon Curd Sponge

Ingredients

200g Caster Sugar

200g baking spread

3 eggs, beaten

200g Self raising flour

the zest and juice of 3 lemons

Lemon curd (for filling)

Method

Preheat your oven to 180 degrees Celsius and great two sandwich cake tins. Cream together the sugar and baking spread by mixing the ingredients together until combined and of a creamy texture. beat 3 eggs and sieve the flour. Gradually add a bit of the egg and flour interchangeably just a bit at a time so not to curdle it. once combined add the zest of 3 lemons, mix and then add the juice of the 3 lemons (or to taste). Mix until combined. Add half of the mixture to one sandwich tin and half the mixture to the other. Bake in the oven for 15 minutes or until the sponge comes away from the edge of the tin and baking stick stays clean once the middle is pricked. Avoid opening the oven door until you are sure the cake is bake as this will cause the rise of the cake to fall. Once baked, take the tins out of the oven and leave to cool slightly. Once cool, carefully remove the sponges from the tins and leave in a cooling rack to cool completely. Once the sponge has completely cool, spread the lemon curd on the flat side of one sponge. How much you add will be up to your preference (I personally love a lemony cake!) After this, place the other sponge on top. Last of all but most certainly most important of all, grab a slice and enjoy!
